Baked Sweet Potatoes with Avocado & Goat Cheese Cream
Sweet potato, avocado, and goat cheese — three of the best ingredients that exist, combined into one effortless dish. These Baked Sweet Potatoes with Avocado & Goat Cheese Cream take literally four steps and taste absolutely incredible. The pale green crema against the vivid orange potato is also genuinely beautiful.
I've thought about my five favourite foods and three of them appear in this recipe. Sweet potato, avocado, and goat cheese. Honestly, if chocolate and peanut butter somehow showed up here too, I'd have a complete life. But three out of five is already enough to make this a deeply personal recipe something I made on my 28th birthday specifically because it contains the things I love most.
What I didn't expect was just how simple it would be. Bake the sweet potatoes. Blend the avocado and goat cheese. Pile one on top of the other. That's genuinely it four steps, zero complexity, and a result that looks restaurant-worthy and tastes even better.

Step 1: bake the sweet potatoes until completely tender around 45–60 minutes at 400°F, depending on size. The skin should be slightly caramelised and the flesh should yield completely to a fork. Season them lightly with olive oil spray, salt, and pepper before they go in.

Step 2: While the potatoes bake, blend avocado, goat cheese, and a squeeze of citrus until completely smooth. Stream in water a tablespoon at a time until you reach a creamy, pourable crema consistency. Season with salt and pepper. What you end up with is this pale green, silky sauce that's tangy from the cheese, rich from the avocado, and bright from the lemon or lime. It's essentially a more refined, complex guacamole.

Step 3: Pile the crema generously onto the split sweet potatoes. The contrast of cool, creamy green against the warm, vivid orange is visually stunning. Step 4: eat immediately, because restraint is not an option with this combination.


The flavour combination here is one of those things that makes you wonder why you don't eat this every week. Sweet and rich from the potato, tangy and creamy from the goat cheese-avocado crema, with the citrus providing just enough brightness to cut through the richness. Warm and cool at the same time. It really is perfect.

Ingredients
- 2 medium sweet potatoes
- olive oil cooking spray
- Kosher salt
- freshly ground black pepper
- 1/2 ripe large avocado
- 2 oz goat cheese, at room temperature
- 1 Tbsp freshly squeezed lime or lemon juice
- water to thin crema, as needed
Directions
- Preheat oven to 400°F.
- Scrub and dry sweet potatoes. Pierce potatoes a few times with a knife or fork. Lightly coat with olive oil cooking spray and season to taste with salt and pepper. Place seasoned potatoes onto a foil-lined baking sheet and bake until soft, about 45-60 minutes.
- Meanwhile, combine avocado, goat cheese, and citrus juice in the bowl of a food processor. Pulse until smooth and creamy, streaming in water (1 tablespoon at a time) until desired consistency is reached (I used just 1 tbsp). Season to taste with salt and pepper.
- When the potatoes are done, slice them lengthwise and top with avocado & goat cheese crema.
