Cinnamon & Sugar Roasted Mixed Nuts
Cinnamon & Sugar Roasted Mixed Nuts are 20 minutes of effort and the result of a recipe people ask for every time you bring them somewhere. Egg-white coated, perfectly caramelised, warmly spiced — they make an excellent snack, cheese board addition, or homemade gift.
If you've ever walked past a street vendor roasting nuts in cinnamon sugar and been stopped completely in your tracks by the smell, you know exactly what these taste like. Making them at home takes about 25 minutes and produces something that rivals any version you'd buy and you can customise the nut mix, the spice level, and the sweetness to exactly what you like.
Like my Cinnamon Toasted Coconut Popcorn, these rely on a simple egg-white coating to create that signature crackly, caramelised shell. The technique is the same, the flavour is in a completely different register warm, nutty, sweet, with enough cinnamon to make the whole thing smell incredible while it bakes.

The Coating
Whisk one egg white until foamy not stiff, just frothy then combine with cinnamon, sugar, salt, and a tiny bit of vanilla. Toss the nuts in this mixture until every piece is thoroughly coated. Spread in a single layer on a parchment-lined baking sheet and bake at 300°F for 20–25 minutes, stirring once at the halfway point for even coating.
The nuts will look slightly wet when they come out that's normal. They crisp up dramatically as they cool. Don't judge them hot from the oven. Let them cool completely (at least 15 minutes) before breaking into clusters and tasting. The egg white sets as it cools into that characteristic crunchy coating.
The Best Nut Mix
- Pecans natural butteriness pairs perfectly with cinnamon
- Almonds add crunch and volume to the mix
- Walnuts slight bitterness balances the sweetness
- Cashews creamy richness, great for variety
These keep in an airtight container for up to two weeks and make excellent homemade gifts packaged in mason jars. They are also genuinely one of the best additions to a cheese board the sweet-spiced crunch is an ideal contrast to creamy and salty cheeses.
